Description

This Cheesy Turkey Tater Tot Hot Dish is a delicious and comforting meal, perfect for any occasion!


Ingredients

Scale
  • 1 lb ground turkey (or ground beef)
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 3/4 tsp garlic powder
  • 12 tbsp olive oil
  • 2 large bell peppers, diced
  • 1/2 one large yellow onion, finely diced
  • 3 large cloves garlic, minced
  • 1/2 tsp salt
  • 2 tsp chili powder
  • 2 tsp cumin
  • 2 tsp paprika
  • pinch of pepper
  • 12 to 16 ounces cheese, grated (I used a mix of monterrey jack and cheddar)
  • 1/4 cup all-purpose flour
  • 3/4 cup milk
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 bag frozen tater tots

Instructions

  1. Preheat oven to 350℉. Chop your onion and bell pepper.
  2. Add the ground turkey (or beef) to a 12-inch cast iron pan (or another 12-inch oven safe skillet). Add the turkey seasonings. Cook over medium heat, stirring to break up the meat, until the meat is completely cooked through. Add the meat to a large paper-towel lined bowl or plate (to soak up any grease) while you make the filling.
  3. In the same pan, heat 1-2 tbsp of oil over medium heat. Saute the onion and peppers until crisp-tender (it’ll cook more in the oven). Add the garlic and sauté for 30-60 seconds, to cook out the raw garlic taste.
  4. Add the meat back into the pan with the veggies, and add the spices, stirring to combine everything. Add the flour, and give it a good stir so it coats everything.
  5. Slowly pour in the milk while whisking the mixture in the pan to keep everything nice and smooth.
  6. Next, slowly add the grated cheese, a handful or so at a time, whisking while you add each handful. Go slow here, so the cheese doesn’t clump up.
  7. Stir in the drained black beans and corn. Taste and add extra seasoning if desired.
  8. Top the mixture in the skillet with the frozen tater tots. If your skillet is super full when you put it in the oven, add a sheet pan underneath to catch any drips.
  9. Bake for 25-30 minutes – the tots will have browned slightly and the filling will be bubbling underneath.
  10. Top with extra diced peppers, cilantro, etc. after baking, if desired. Enjoy immediately! Store leftovers, tightly covered, in the fridge for up to 5 days.

Notes

  • Feel free to customize the type of cheese used for your desired cheesiness.
  • For added flavor, you can mix in some hot sauce or jalapeños.
