What Makes Sheet Pan Salmon and Asparagus a Go-To Recipe?

  • Convenience: Everything cooks together on one pan.

  • Health Benefits: A quick and nutritious meal.
  • Flavorful: A delicious combination of fresh ingredients.

Finding the right balance between flavor and ease can be challenging, but Sheet Pan Salmon and Asparagus makes it all possible.

Key Ingredients for Sheet Pan Salmon and Asparagus

Salmon: For a delightful flavor, I recommend using fresh salmon fillets. They are rich in omega-3 fatty acids and have a wonderful taste that holds up beautifully when roasted. If fresh isn’t available, don’t hesitate to opt for frozen fillets; they can be just as satisfying when thawed properly.

Asparagus: Fresh asparagus spears are a must for this dish. They add a bright green color and a crisp texture that complements the salmon perfectly. Thin, tender stalks work best — look for vibrant green with firm tips for optimal freshness.

Olive Oil: I drizzle a generous amount of extra-virgin olive oil over both the salmon and asparagus. This not only enhances flavor but also ensures that everything cooks evenly and stays moist.

Seasoning: Simple yet effective! A sprinkle of salt, pepper, and garlic powder elevates the taste without overshadowing the natural flavors of the fish and vegetables.

Lemon: Fresh lemon juice adds a zing that brightens up the dish and balances the richness of the salmon beautifully.

Cooking Tips and Notes for Sheet Pan Salmon and Asparagus

Embarking on the journey of Sheet Pan Salmon and Asparagus is a delightful experience. The beauty of this dish lies not only in its vibrant presentation but also in its health-packed ingredients. Below are some cooking tips to elevate your culinary adventure!

Choose the Right Salmon

When selecting salmon, fresh is always best for the most flavor and texture. Look for fillets that are bright in color, with no gray spots. If fresh isn’t available, high-quality frozen salmon is a great alternative. Just make sure to fully thaw it in the refrigerator overnight for even cooking.

Asparagus Preparations

Trim the ends of the asparagus to make sure you’re using the tender parts. For added flavor, consider marinating them briefly in olive oil, lemon juice, and a pinch of salt before roasting.

Mind Your Timing

To achieve that perfect char on the salmon while keeping the asparagus tender-crisp, consider staggering their cooking times. Start roasting the asparagus first for about 10 minutes before adding the salmon. This way, both elements finish cooking at the same time, ensuring a harmonious plate.

Use Parchment Paper

Using parchment paper not only makes for easy clean-up, but it also prevents your salmon and asparagus from sticking. It’s the little touches that can make a big difference in your cooking experience!

By keeping these simple tips in mind, your Sheet Pan Salmon and Asparagus will not only be delicious but also a joy to prepare!

Serving Suggestions

Elevate your experience with Sheet Pan Salmon and Asparagus by adding a few simple touches that will make your meal feel like an occasion. Imagine drizzling a zesty lemon vinaigrette over the roasted salmon just before serving. This small addition not only enhances the dish’s flavors but also adds a pop of brightness that complements the fish beautifully.

Consider pairing your salmon and asparagus with a light side salad. A fresh mix of arugula, cherry tomatoes, and a dash of balsamic dressing can provide a delightful crunch and freshness, rounding out your meal perfectly. For a heartier option, serving over a bed of quinoa or wild rice can add a nutty flavor and extra texture.

Finally, don’t shy away from garnishing with fresh herbs, like dill or parsley, to introduce an aromatic punch. Each bite will remind you why this recipe is a weeknight favorite!

Description

A delicious and healthy recipe for salmon fillets roasted with asparagus and drizzled with a lemon oil.

Ingredients

Scale
  • 2 large lemons
  • 5 T extra virgin olive oil (divided)
  • 1 lb. fresh asparagus
  • to taste salt
  • to taste fresh ground black pepper
  • four 6 oz. salmon fillets
  • to taste Szeged Fish Rub (or other fish rub of your choice)

Instructions

  1. Preheat oven to 450F/230C.
  2. Spray baking sheet with non-stick spray or brush with olive oil.
  3. Hold an asparagus piece in both hands and bend until it snaps to see how much of the woody stem you should cut off.
  4. Trim other pieces to that length and cut asparagus into pieces about 3 inches long.
  5. Put asparagus into a bowl and toss with 1 T olive oil plus salt and fresh-ground black pepper to taste.
  6. Spread out asparagus onto baking sheet so it’s in a single layer and roast for 5 minutes.
  7. While asparagus roasts, use a microplane grater to zest the lemon rinds into a small measuring cup.
  8. Squeeze lemon juice into a small bowl, then measure 2 T juice and add to the lemon zest.
  9. Whisk 3 T extra virgin olive oil into the lemon zest-juice and set the lemon oil aside.
  10. Rub each piece of salmon on both sides with the other tablespoon of olive oil.
  11. Season salmon with salt and fresh ground black pepper to taste, and rub with Szeged Fish Rub.
  12. After 5 minutes, push the asparagus over to make room and place the salmon pieces on the baking sheet.
  13. Put salmon and asparagus back into oven and roast for about 10 minutes longer.
  14. This is done when asparagus is starting to soften and salmon feels barely firm to the touch.
  15. Drizzle desired amount of lemon oil over salmon and asparagus and serve.

Notes

  • You can use as much or as little lemon zest as you prefer.
