Ingredients

- 2 ripe avocados, diced
- 2 ripe mangoes, diced
- 1 red bell pepper, diced
- ½ red onion, finely chopped
- 1 cup cherry tomatoes, halved
- ¼ cup fresh cilantro, chopped
- 2 tablespoons olive oil
- Juice of 2 limes
- Salt and pepper to taste
- Optional: Chopped jalapeño for heat
Instructions
- Wash all fresh produce thoroughly.
- Carefully cut the avocados and mangoes into bite-sized pieces and place them in a large mixing bowl.
- Dice the red bell pepper, finely chop the red onion, and halve the cherry tomatoes. Add them to the mixing bowl.
- Introduce the chopped cilantro to the bowl for extra freshness.
- In a small bowl, whisk together the olive oil and lime juice. Season with salt and pepper to taste.
- Pour the dressing over the salad mixture. Gently toss everything to combine without mashing the avocados.
- Check the seasoning and adjust with more salt, pepper, or lime juice as needed.
- Transfer the salad to a serving bowl or individual plates.

- This salad is best served fresh.
