Description

This hearty beef taco soup is packed with flavor and perfect for a cozy dinner.


Ingredients

  • 1 pound ground beef
  • 1 small onion (diced)
  • 3 cloves garlic (minced)
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1 packet taco seasoning (or 3 tablespoons homemade)
  • 2 1/2 cups beef broth
  • 115 ounce can pinto beans (undrained)
  • 115 ounce can black beans (undrained)
  • 115 ounce can kidney beans (undrained)
  • 14 ounce can green chiles (undrained)
  • 2 cups frozen corn
  • 114 ounce can diced tomatoes (undrained)
  • 1 packet ranch dressing mix

Instructions

  1. Heat a large pot on medium-high heat. Add the ground beef and onion and cook until browned, about 7-8 minutes.
  2. Add in the garlic and cook another 30 seconds.
  3. Add in the chili powder, smoked paprika, salt, pepper, and taco seasoning, and cook another 30 seconds.
  4. Add in the beans, green chiles, corn, tomatoes, and ranch seasoning and give it a stir.
  5. Pour in the beef broth and mix until combined, and simmer on low for 1 hour with the lid on.
  6. Serve with all of your favorite toppings!
