Description

A hearty slow cooker dish featuring ground beef and a medley of colorful bell peppers.


Ingredients

  • 1 lb ground beef
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 (28 oz) can diced tomatoes
  • 1 (15 oz) can tomato sauce
  • 4 cups beef broth
  • 1 cup cooked white rice
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Brown the ground beef in a skillet over medium heat and drain excess fat.
  2. Transfer the cooked beef to a slow cooker.
  3. Add diced bell peppers, onion, and garlic to the slow cooker.
  4. Pour in diced tomatoes, tomato sauce, and beef broth.
  5. Stir in Italian seasoning, paprika, salt, and black pepper.
  6. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
  7. About 30 minutes before serving, stir in the cooked rice.
  8. Taste and adjust seasoning, serve hot.
