Description

This royal icing is perfect for decorating cookies, it dries to a hard finish and holds its shape well.


Ingredients

Scale
  • 3 egg whites
  • 1 pound confectioners’ sugar (450g)
  • 1 teaspoon vanilla extract

Instructions

  1. In a stand mixer or large mixing bowl, beat the egg whites on medium-low speed until frothy, about 1 minute.
  2. Gradually add confectioners’ sugar and vanilla extract while the mixer is on low speed until fully incorporated.
  3. Increase the mixer speed to medium-high and beat until stiff, shiny peaks form.
  4. Cover any unused icing with plastic wrap to prevent drying.
  5. Transfer the icing to piping bags and decorate your cookies as desired.
