- 2 cups (400g) all-purpose flour
- 1 cup (200g) granulated sugar
- 1/2 cup (100g) unsalted butter, softened
- 2 large eggs
- 1/4 cup (50g) fresh lemon juice
- 2 tablespoons (30g) lemon zest
- 1 teaspoon (5g) baking powder
- 1/2 teaspoon (2g) salt
- 1/2 cup (100g) powdered sugar for rolling
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large bowl, cream butter and granulated sugar until light and fluffy.
- Beat in eggs one at a time, then mix in lemon juice and zest.
- Gradually add dry ingredients to wet ingredients, mixing until just combined.
- Place powdered sugar in a shallow bowl. Scoop dough into 1-inch balls and roll in powdered sugar to coat heavily.
- Place balls 2 inches apart on prepared baking sheets.
- Bake for 10-12 minutes until edges are set and cookies have crinkled tops.
- Cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely.
Notes
- For added flavor, you can substitute half the granulated sugar with brown sugar.
- Cookies can be stored in an airtight container for up to one week.
