Description

Delicious lemon crinkle cookies that are soft and chewy with a refreshing citrus flavor.


Ingredients

  • 2 cups (400g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1/2 cup (100g) unsalted butter, softened
  • 2 large eggs
  • 1/4 cup (50g) fresh lemon juice
  • 2 tablespoons (30g) lemon zest
  • 1 teaspoon (5g) baking powder
  • 1/2 teaspoon (2g) salt
  • 1/2 cup (100g) powdered sugar for rolling

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream butter and granulated sugar until light and fluffy.
  4. Beat in eggs one at a time, then mix in lemon juice and zest.
  5. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  6. Place powdered sugar in a shallow bowl. Scoop dough into 1-inch balls and roll in powdered sugar to coat heavily.
  7. Place balls 2 inches apart on prepared baking sheets.
  8. Bake for 10-12 minutes until edges are set and cookies have crinkled tops.
  9. Cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely.

Notes

  • For added flavor, you can substitute half the granulated sugar with brown sugar.
  • Cookies can be stored in an airtight container for up to one week.
