Description
A delicious vegan pizza topped with sautéed mushrooms and fresh kale.
Ingredients

- 1 pizza dough (store-bought or homemade)
- 1 cup sliced cremini mushrooms
- 2 cups fresh kale, chopped
- 1 cup vegan cheese (shredded)
- 2 tbsp olive oil
- 1 tsp garlic powder
- ½ tsp red pepper flakes (optional)
Instructions
- Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven while preheating.
- Roll out the pizza dough on a floured surface to about half an inch thick and transfer it to a parchment-lined baking sheet.
- In a skillet over medium heat, drizzle olive oil and add sliced mushrooms. Sauté until golden brown (about 5 minutes), then stir in chopped kale until just wilted.
- Spread vegan cheese evenly over the dough. Top with sautéed mushrooms and kale mix, then sprinkle with garlic powder and red pepper flakes if desired.
- Bake for 12-15 minutes until the crust is golden brown and crispy.
- Allow to cool slightly before slicing and serving.
