Description

A delicious vegan pizza topped with sautéed mushrooms and fresh kale.


Ingredients

Scale
  • 1 pizza dough (store-bought or homemade)
  • 1 cup sliced cremini mushrooms
  • 2 cups fresh kale, chopped
  • 1 cup vegan cheese (shredded)
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • ½ tsp red pepper flakes (optional)

Instructions

  1. Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven while preheating.
  2. Roll out the pizza dough on a floured surface to about half an inch thick and transfer it to a parchment-lined baking sheet.
  3. In a skillet over medium heat, drizzle olive oil and add sliced mushrooms. Sauté until golden brown (about 5 minutes), then stir in chopped kale until just wilted.
  4. Spread vegan cheese evenly over the dough. Top with sautéed mushrooms and kale mix, then sprinkle with garlic powder and red pepper flakes if desired.
  5. Bake for 12-15 minutes until the crust is golden brown and crispy.
  6. Allow to cool slightly before slicing and serving.
