A delicious and easy shrimp pasta with fresh spinach, tomatoes and Parmesan cheese.

- 8 oz spaghetti or fettuccine
- 1 lb large shrimp, peeled and deveined
- 4 cups fresh spinach
- 1 cup cherry tomatoes, halved
- 3 cloves garlic, minced
- 2 tbsp extra virgin olive oil
- ½ cup freshly grated Parmesan cheese
- ¼ tsp red pepper flakes (adjust to taste)
- Salt and pepper to taste
Instructions
- Cook the Pasta: Boil a large pot of salted water and cook the pasta according to package directions until al dente (about 8-10 minutes). Drain and reserve some pasta water.
- Sauté Garlic and Shrimp: In a skillet over medium heat, add olive oil and minced garlic. Sauté until fragrant (about 30 seconds), then add shrimp. Cook until pink and opaque (about 3-4 minutes).
- Add Tomatoes and Spinach: Stir in cherry tomatoes and spinach. Cook until the tomatoes soften and spinach wilts (2-3 minutes).
- Combine: Add drained pasta to the skillet, tossing everything together gently. If dry, add a splash of reserved pasta water.
- Season and Serve: Sprinkle with salt, pepper, red pepper flakes, and Parmesan cheese. Toss well before serving.
