Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, whisk together honey, balsamic vinegar, olive oil, salt, and pepper until smooth.
- Toss the carrot pieces in the glaze until evenly coated.
- Spread the carrots on a parchment-lined baking sheet in a single layer.
- Roast for 25-30 minutes, flipping halfway through until tender and caramelized.
