Description

Deliciously marinated chicken thighs roasted in the oven, perfect for a weeknight dinner.


Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 1/4 cup low-sodium soy sauce
  • 4 cloves fresh garlic, minced
  • 2 tbsp brown sugar
  • 1 tbsp sesame oil
  • 2 green onions, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C) and lightly spray a baking dish with nonstick cooking spray.
  2. In a bowl, whisk together soy sauce, minced garlic, brown sugar, and sesame oil to create the marinade.
  3. Place chicken thighs in a resealable bag or shallow dish and pour the marinade over them. Ensure they are fully coated; marinate in the fridge for at least 30 minutes.
  4. Arrange the marinated thighs skin-side up in the prepared baking dish and pour any leftover marinade on top.
  5. Roast in the preheated oven for 35-40 minutes or until the internal temperature reaches 165°F (75°C).
  6. Let rest for 5 minutes before serving, garnished with chopped green onions.
