Chili Powder: Choosing the heat level for flavor and personalization

The right chili powder can make or break your dish. Opt for a blend that suits your taste; whether you prefer mild, smoky, or hot varieties, remember, you can always start light and add more to meet your preferred heat level!

Beef Stew Meat: The best cuts for rich, tender slow-cooked beef

For the ultimate instant pot chili con carne, select well-marbled beef stew meat, such as chuck or brisket. These cuts become incredibly tender during cooking and infuse the chili with rich flavor, making each bite a delight.

Spices and Herbs: Elevating the dish with earthy and aromatic blends

A combination of cumin, oregano, and garlic powder can elevate your chili from ordinary to extraordinary. These spices anchor the flavor, creating a fragrant base that complements the beef perfectly.

Tomatoes and Tomato Paste: Building the base for a delicious sauce

Canned diced tomatoes and tomato paste serve as the backbone of your chili. They not only add moisture but also form a rich, tangy sauce that binds all the ingredients together beautifully.

Kidney Beans: Adding texture and protein to the chili

Kidney beans add both texture and protein to your instant pot chili con carne. They soak up the flavors of the spices while providing a hearty element, making your chili even more satisfying.

Cooking Tips and Notes for Instant Pot Chili

When preparing instant pot chili con carne, it’s easy to get lost in the flurry of cooking. The good news? A few tips can take your chili to impressive new heights.

Balancing Flavors

  • Cook the Beef First: Searing your shredded beef in the Instant Pot before adding every other ingredient can amplify its flavor. This browning process creates a delicious base that will infuse the entire dish. Aim for a nice caramelization to unlock that rich taste.

  • Layer Your Spices: Instead of throwing all your spices in at once, consider layering them throughout the cooking process. This enhances their individual flavors and makes each spoonful richer and more complex.

Choosing the Right Ingredients

  • Fresh is Best: Whenever possible, incorporating fresh vegetables and quality spices gives that extra kick. Fresh bell peppers and onions provide a crunch that really stands out in your instant pot chili con carne.

  • Consistency Matters: If your chili turns out thicker than preferred, simply add a bit more broth or water to achieve your desired consistency. Remember, it’s easier to adjust by adding than thinning it out too much from the start.

Timing is Key

  • Natural Release for Richer Flavor: After cooking, allow the Instant Pot to release naturally for about 10 minutes before switching to quick release. This helps the flavors meld beautifully.

These little insights will help enhance your instant pot chili con carne experience. Happy cooking!

Description

A hearty and flavorful chili made with tender beef, beans, and a blend of spices, perfect for any occasion.

Ingredients

Scale
  • 1 tablespoon chili powder (mild, medium or hot – your preference)
  • 4 teaspoons ground cumin
  • 4 teaspoons paprika
  • 1/4 teaspoon ground cinnamon
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 2 tablespoons olive oil
  • 2 pounds beef stew meat (like chuck roast, casserole steak, etc.) (about 900 g)
  • 1 large onion (white, yellow or brown), diced
  • 1 tablespoon (about 3 cloves) garlic, minced
  • 4 tablespoons tomato paste
  • 2 14 oz/400 g cans crushed tomatoes
  • 1 cup (240 ml) beef stock
  • 1 tablespoon honey or sugar (brown, white or coconut sugar will all work)
  • 2 14 oz/420 g cans kidney beans, drained and rinsed
  • Salt & Pepper to taste

Instructions

  1. Whisk all of the spices needed for the spice blend together in a small bowl. Set aside.
  2. Add the olive oil to the Instant Pot and press the “Sauté” button. Salt and pepper each side of the beef. Once the oil is warm, add beef to the pot and brown each side cooking 3-4 minutes. Work in batches to easily fit all of the meat.
  3. Once all sides of the beef are browned, remove from the pot and set aside on a plate.
  4. Add a little more oil to the pot if it’s looking dry, then add the onion and garlic. Stir and cook about 3 minutes.
  5. Add the tomato paste and spice blend and cook another 2-3 minutes, stirring often.
  6. Stir in the chopped tomatoes, beef stock, and honey/sugar to the pot and mix everything together well. Add the beef back to the pot. Submerge in the liquids as much as you can – it likely won’t fully be covered.
  7. Press the “Keep Warm/Cancel” button to stop the sauté function. Secure the lid and make sure the steam valve is set to closed. Press ‘Manual’ or ‘Pressure Cook’ and set the timer to 50 minutes.
  8. After the time is up, the Instant Pot will automatically switch to keep warm. Let it keep warm for at least 10 minutes before releasing the steam valve.
  9. Once the steam has been fully released, remove the lid of the instant pot. Remove the beef from the pot and transfer to a plate or bowl to shred.
  10. Add the kidney beans to the pot, and press the “Sauté” button to bring the pot to a simmer. This will help warm the beans through and reduce the liquids down to make for a thicker chili. Simmer for at least 10 minutes. If you want a thicker chili, simmer longer and smash up some of the beans.
  11. Taste and season with more salt if needed. Top with your favourite chili toppings and enjoy.

Notes

  • Each batch of beef may need to be cooked separately to ensure even browning.
