These cheesy beef roll-ups are a delicious and easy meal perfect for any occasion.
Ingredients

- 1 lb ground beef
- 1 small yellow onion, finely chopped
- 3 garlic cloves, minced (divided)
- 1 1/2 cups shredded cheddar cheese
- 8 medium flour tortillas
- 4 tbsp unsalted butter
- 1/4 tsp salt
- 1/4 tsp black pepper
- 2 tbsp chopped fresh parsley (optional)
Instructions
- In a skillet over medium heat, cook ground beef until browned. Drain excess fat.
- Add chopped onion and 2 minced garlic cloves. Cook for 3–4 minutes until softened.
- Season with salt and pepper, stir, and remove from heat. Let the mixture cool slightly.
- Lay out tortillas and add 2–3 tbsp of beef mixture along one edge. Top with shredded cheese.
- Roll each tortilla tightly, tucking in the ends.
- Melt butter in a small saucepan and stir in remaining minced garlic.
- Place rollups seam side down in a greased baking dish. Brush tops with garlic butter.
- Bake at 375°F (190°C) for 15–20 minutes, until golden and crispy.
- Optionally sprinkle chopped parsley on top and serve warm with dipping sauce.
Notes
- These roll-ups are great for meal prep and can be frozen before baking.
