Ingredients

- 1 lb lean ground chicken
- 1 cup chopped bell peppers (red, yellow, green)
- 1 medium yellow onion, chopped
- 2 tsp taco seasoning
- Juice of 1 lime
- 1 cup cooked rice or quinoa
- ¼ cup fresh cilantro, chopped
- ½ avocado (sliced)
- ¼ cup shredded cheese
Instructions
- Heat olive oil in a large skillet over medium heat. Sauté onions and bell peppers until softened (about 5 minutes).
- Push veggies aside and add ground chicken. Cook until browned (7-10 minutes), breaking it apart as it cooks.
- Add taco seasoning and lime juice; stir well and cook for an additional 2-3 minutes.
- Prepare rice or quinoa according to package instructions.
- Assemble the bowls by adding a scoop of rice or quinoa topped with the chicken mixture.
- Garnish with fresh cilantro and desired toppings. Enjoy warm!
