Ingredients

- 2 cups fresh broccoli florets
- 2 cups baby potatoes, halved
- 3 tablespoons olive oil
- 4 garlic cloves, minced
- ½ cup grated Parmesan cheese
- ½ teaspoon salt
- ½ teaspoon black pepper
- Juice of 1 lemon
Instructions
- Preheat your oven to 400°F (200°C).
- Cut two feet of heavy-duty aluminum foil per serving.
- In a large bowl, combine broccoli florets and halved baby potatoes. Drizzle with olive oil, minced garlic, salt, pepper, and lemon juice. Toss well to coat.
- Spoon equal portions of the veggie mixture onto each piece of foil and top with grated Parmesan cheese.
- Fold the sides tightly to seal the packets.
- Place on a baking sheet and bake for 25-30 minutes until vegetables are tender.
