Description

A delicious and easy recipe for foil pack baked veggies with broccoli and baby potatoes.


Ingredients

Scale
  • 2 cups fresh broccoli florets
  • 2 cups baby potatoes, halved
  • 3 tablespoons olive oil
  • 4 garlic cloves, minced
  • ½ cup grated Parmesan cheese
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • Juice of 1 lemon

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut two feet of heavy-duty aluminum foil per serving.
  3. In a large bowl, combine broccoli florets and halved baby potatoes. Drizzle with olive oil, minced garlic, salt, pepper, and lemon juice. Toss well to coat.
  4. Spoon equal portions of the veggie mixture onto each piece of foil and top with grated Parmesan cheese.
  5. Fold the sides tightly to seal the packets.
  6. Place on a baking sheet and bake for 25-30 minutes until vegetables are tender.
