Description
A refreshing smoothie made with blueberries and coconut milk.
Ingredients

- 1 cup fresh or frozen blueberries
- 1/2 cup coconut milk (full-fat for creaminess or light for a lighter option)
- 1 tablespoon honey or maple syrup (adjust to taste)
- 1/2 cup cold water
- 1 cup ice cubes
- Fresh blueberries and toasted coconut flakes for garnish (optional)
Instructions
- Place the blueberries, coconut milk, honey (or maple syrup), and cold water into a blender.
- Blend on high until the mixture is completely smooth.
- Add the ice cubes and blend again until the drink is thick, slushy, and smooth.
- Taste and adjust sweetness, adding a little more honey if desired.
- Pour immediately into two glasses.
- Garnish with a few fresh blueberries and a sprinkle of toasted coconut flakes, if using. Serve right away with a straw.
Notes
- For a thicker smoothie, use frozen blueberries and a full-fat coconut milk.
- Adjust the sweetness to your preference by adding more honey or maple syrup.
