Ingredients

  • 1/2 cup coconut milk (full-fat for creaminess or light for a lighter option)
  • 1 tablespoon honey or maple syrup (adjust to taste)
  • 1/2 cup cold water
  • 1 cup ice cubes
  • Fresh blueberries and toasted coconut flakes for garnish (optional)

Instructions

  1. Place the blueberries, coconut milk, honey (or maple syrup), and cold water into a blender.
  2. Blend on high until the mixture is completely smooth.
  3. Add the ice cubes and blend again until the drink is thick, slushy, and smooth.
  4. Taste and adjust sweetness, adding a little more honey if desired.
  5. Pour immediately into two glasses.
  6. Garnish with a few fresh blueberries and a sprinkle of toasted coconut flakes, if using. Serve right away with a straw.
