This delicious chicken and rice casserole is a perfect comfort food for any occasion.
Ingredients

- 2 cups cooked chicken, diced or shredded
- 2 cups cooked white rice
- 2 cups broccoli florets (fresh or frozen)
- 1 can (10 oz) cream of chicken soup
- ½ cup milk
- 1 cup shredded cheddar cheese
- ½ cup shredded mozzarella cheese
- 2 tablespoons butter, melted
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- Salt and black pepper, to taste
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a baking dish.
- In a large bowl, mix cooked chicken, cooked rice, and broccoli.
- Add cream of chicken soup, milk, melted butter, garlic powder, onion powder, salt, and pepper. Stir until well combined.
- Fold in half of the cheddar and mozzarella cheese.
- Transfer mixture to the prepared baking dish and spread evenly.
- Sprinkle remaining cheese on top.
- Bake uncovered for 30–35 minutes, until bubbly and lightly golden.
- Let rest for 5 minutes before serving.
Notes
- This casserole can be made ahead of time and stored in the refrigerator before baking.
- Feel free to add other vegetables like carrots or peas for extra nutrition.
