A delicious and creamy avocado egg salad, perfect for sandwiches or lettuce wraps.
Ingredients

- 4 large eggs
- 2 ripe avocados
- 3 tbsp Everything Bagel seasoning
- 1 tbsp freshly squeezed lemon juice
- Salt and pepper to taste
- Fresh herbs (optional) for garnish
Instructions
- Boil the eggs: Place in a pot, cover with water, bring to a boil. Remove from heat and let sit covered for 12-14 minutes. Transfer to an ice bath.
- Prepare the avocados: Slice and scoop into a mixing bowl. Mash lightly until creamy yet chunky.
- Add flavorings: Stir in lemon juice, Everything Bagel seasoning, salt, and pepper.
- Peel & chop eggs: Once cooled, peel under running water. Chop and gently fold into avocado mixture.
- Taste & adjust seasoning as needed.
- Serve on toast, in lettuce wraps, or on its own.
Notes
- This salad pairs well with whole grain bread or can be served on its own for a low-carb option.
