Description

This rich and creamy pecan fudge is sure to satisfy your sweet tooth!


Ingredients

Scale
  • 1 cup pecans (toasted, chopped)
  • 1 can sweetened condensed milk (14 oz.)
  • 1 bag semi-sweet chocolate chips (12 oz.)
  • 1/8 teaspoon salt (optional)
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Start by toasting 1 cup pecans. Place them on a baking sheet and toast for 5-10 minutes in a 300°F (150°C) oven until fragrant. Let cool, then chop with a large knife. Reserve a few to decorate the top.
  2. Line a 8×8-inch square baking pan with parchment paper or wax paper with overhang (for lifting out later).
  3. Add 1 bag semi-sweet chocolate chips and 1 can sweetened condensed milk to a medium saucepan with heavy bottom. If using, also add optional 1/8 teaspoon salt.
  4. Heat on the lowest setting while stirring almost constantly with a spatula until the mixture is melted and smooth. This should take about 5-8 minutes.
  5. If you want fudge that’s firm at room temperature, keep heating the fudge mixture for another 5-8 minutes. Stir almost constantly so that it doesn’t burn to the bottom of the pot.
  6. Stir in optional 1 teaspoon vanilla extract and the chopped, toasted pecans (minus the reserved ones). Then pour the pecan fudge mixture into the prepared pan. Smooth out the top with the spatula and sprinkle with the remaining pecan pieces.
  7. Let the fudge cool to room temperature for about 4 hours, or chill in the fridge for 2 hours.
  8. Once cool and set, lift out the fudge by the parchment paper and cut into 1 inch squares.
  9. Store the fudge in an air tight container to keep from hardening and drying out. Properly wrapped the fudge will last about 2 weeks at room temperature; 3-4 weeks refrigerated and at least 2-3 months in the freezer.
