- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 3/4 cup brown sugar, packed
- 2 tsp pure vanilla extract
- 1 large egg
- 2 cups all-purpose flour
- 1 tsp baking soda
- 4 cups Rice Krispies cereal
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add vanilla extract and the egg, mixing until well combined.
- In another bowl, whisk together flour and baking soda. Gradually add to the wet mixture until just combined.
- Gently fold in the Rice Krispies cereal and stir in the chocolate chips.
- Drop tablespoon-sized balls of dough onto prepared baking sheets, spacing them about two inches apart.
- Bake for 10-12 minutes or until edges are lightly golden brown.
- Let cool on the baking sheet for five minutes before transferring to wire racks.
